  1. Boil potatoes, then simmer until tender. Leave skin on.
  2. Meanwhile, salute scallions in saucepan with melted butter until tender.
  3. Whisk in sour cream, half and half, and salt and pepper to taste until smooth. Remove from heat, cover to keep warm.
  4. Drain potatoes and let stand for 5 minutes. With a rubber spatula, break potatoes into chunks.
  5. Fold in sour cream mixture. Stir in scallions and season with salt and pepper.
  6. If butter is your forte, now is a good time to add more! Enjoy!
Recipe Notes

Instead of using scallions, you can also substitute a finely chopped cooking onion. Follow all instructions the same for scallions!
