Instructions
  1. In a mixing bowl, cream shortening and sugar.
  2. Add eggs and vanilla. Mix well.
  3. Combine flour, baking powder, baking soda, and salt.
  4. Add the creamed mixture alternately with sour cream. Stir in apples.
  5. Transfer to two greased 8x8" baking dishes.
Topping
  1. Combine brown sugar and cinnamon. Cut in butter until crumbly.
  2. Stir in nuts and sprinkle over batter.
Baking
  1. Bake at 350 degrees for 30-35 minutes, or until a toothpick is inserted and comes out clean.
  2. Cool completely and enjoy!

Cover and freeze for up to 6 months to enjoy your coffee cake later! It's as easy as thawing overnight in the refrigerator to enjoy a delicious breakfast the next morning.
